VINIFICATION : fermentation on skins for 12 days in steel tanks at controlled temperature practicing pumping over and delestage.
AGEING : refined 12 months in oak and barrique, elevated six months in bottle.
TASTING NOTES : Ruby red with violet hints, dried fruits bouquet, blackcurrant, blackberry and spices. Silky and elegant tannins. Long and persistent finish.
FOOD PAIRING : pasta dishes, fiorentina meat, fois gras, black truffle.
